I was originally going to use honey as a sweetener but with the recent decline of honey bees and a probable increase in the cost of honey, agave nectar can be a great alternative. Wiki info

I gave some co-workers a sample of the bar....too sweet. next round i'll reduce the amount of honey and maybe add some herb to counter the sweetness. any chefs out there that can recommend a certain herb? mint? thyme?
